Olive oil is a fruit oil obtained from the olive. Olive oil is commonly used in cooking, cosmetics, pharmaceuticals and soaps. Over 750 million olive trees are cultivated worldwide, %95 of which in the Mediterranean region.

Olive oil is classified as "extra virgin olive oil", "virgin olive oil", "pure olive oil", "olive pomace oil" and "organic olive oil".

Extra virgin olive oil comes from cold pressing of olives, contains no more than 0,8% acidity, and is judged to have a superior taste.

Virgin olive oil has an acidity less than 2%, and is judged to have a good taste.

Pure olive oil is the blend of refined olive oil and nature (virgin) olive oil.

Olive pomace oil is a blend of refined pomace olive oil and possible some virgin olive oil fit for consumption. It may not be described simply as olive oil.

Organic olive oil comes from cold pressing of organic cultivated olives. Organic certificate is provided for organic olive oil.
